My mom's recipe for Butterscotch Scotchies:

Butterscotch Scotchies

2- sticks butter plus ½ stick butter –flavored Crisco
2- large eggs
2 – ½ cups flour sifted
¾ cup granulated sugar
¾ cup dark brown sugar - packed
1-tsp baking soda
½ - tsp. salt & a pinch
2- tsp. pure vanilla
½ cup shredded sweetened coconut
¾ cup pecans chopped
2 bags of butterscotch morsels

Preheat oven 3750 Sift flour, baking soda and salt (3) times to be sure of even consistency. Cream butter, Crisco and both sugars adding sugar a little at a time. Add eggs one at a time and then vanilla. Fold in flour a little at a time and stir just enough to make flour disappear. Add pecans, coconut and butterscotch.

Drop by rounded spoonful on ungreased cookie sheet and bake from 14-17 minutes depending on your oven. When edges are golden brown and top looks dry remove from oven and set for a few minutes then remove from pan to cool.

One of my favorites growing up. Mini tart sized pecan pies. Made them last night. :)

I love pecan tastes, VG!

I'll be making kiffles tomorrow, my mom always made these during Christmas while growing up. They are my favorite! I use Cherry, Apricot, & blueberry filling.

That's what I'm making tonight! I have the dough ready. We always called them apricot foldovers. My family always put processed cheese in the dough though. Odd but good. :)
